Instant Pot Tuscan Chicken

  • 1 lb boneless chicken breasts skinless
  • 1 tbsp olive oil
  • 2 tsp paprika
  • salt to taste
  • black pepper to taste
  • 2 tbsp butter
  • 1 cup onion chopped
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 4 1/2 cups low sodium chicken broth
  • 1 cup milk
  • 12 ounce penne pasta
  • 6 ounce cream cheese softened & cut into small pieces
  • 1 1/2 cup parmesan cheese grated
  • 8 ounce sun dried tomatoes chopped & drained
  • 4 ounce baby spinach leaves
  • Turn on the instant pot and select sauté.
  • Season chicken breasts on both sides with salt and pepper.
  • Add olive oil in the instant pot.
  • Add in chicken and cook for 2 minutes on each side.
  • Place them on a plate.
  • Add butter, onion in the pot and sauté for 2 minutes.
  • Add in chicken broth, milk, seasoning, pasta and chicken breasts.
  • Close the lid of the instant pot and set valve to sealing.
  • Set the instant pot to “Manual” at high pressure for 5 minutes, release the pressure quickly through steam vent.
  • Open the lid of the instant pot.
  • Place chicken on a plate and tent it with foil.
  • Add in cream cheese and stir continuously till meted.
  • Add tomatoes, parmesan cheese, spinach, salt, pepper and stir well.
  • Chop the chicken and place it back in the pot.
  • Stir well, serve hot and enjoy.
