Corrie, I have to disagree with some of your side dish choices with the Tuscan Chicken pasta. All the Carb laden sides. I:e mashed potatoes, rice & even risotto are way too heavy with the already carb filled, heavy meal.
Best suggestion is to sick with a light salad and maybe the Italian bread or garlic bread.
Also you typically would serve other Italian/ Tuscan meals with sides that are same flavor profile. Mashed potatoes, sorry doesn’t go with this flavor profile.
