This makes it a go-to dish for any day of the week, especially when you want something that tastes special without the fuss.

Flavorful Depth: Despite its simplicity, this beef enchiladas recipe doesn’t skimp on flavor. The combination of well-seasoned beef, corn tortillas, and a tangy sauce ensures that every bite is a harmonious blend of textures and tastes. Moreover, as the enchiladas bake, the flavors meld, producing a dish that is greater than the sum of its parts. Ingredients

Ground beef - This is the main protein for the enchilada filling. It's flavorful and easy to cook. Substitute: Ground chicken or turkey for a leaner option.

Tortillas-Preferably corn tortillas as they offer an authentic taste. Substitute: Flour tortillas if you prefer a softer texture.

Red enchilada sauce - This sauce adds the spicy and tangy flavor to the enchiladas. You can buy it pre-made or make it at home. Substitute: Green enchilada sauce for a different taste.

Cheese - A mix of shredded Monterey Jack and cheddar gives a creamy melt. Substitute: Copoundy or pepper jack for a different flavor profile.

Onions- Adds a sweet and aromatic flavor when cooked with the beef. Substitute: Green onions or omit if preferred.

Tips

  • For a smokier flavor, consider adding a pinch of smoked paprika to the beef mixture.
  • Let enchiladas sit for about 5 minutes after baking to set and avoid being too runny.
  • If using store-bought enchilada sauce, taste and adjust spices according to preference.
  • To avoid a soggy bottom, lightly fry the tortillas in oil for a few seconds before assembling.
  • Garnish with fresh cilantro or diced tomatoes for added freshness.

How to Serve

Beef enchiladas are a hearty dish, perfect for family dinners or gatherings. Their rich flavor is complemented by light sides or garnishes. Here are three ideas:

  • Rice and Beans: Serve your enchiladas alongside a dollop of refried beans and some cilantro-lime rice. It makes for a complete, balanced meal.
  • Salad: A fresh green salad with avocado, cherry tomatoes, and a zesty dressing can cut through the richness of the enchiladas.
  • Sour Cream and Guacamole: The coolness of sour cream and the richness of guacamole make perfect toppings for hot enchiladas.
