Let’s go back to basics with this Instant Pot Beets recipe.
This Paleo, gluten-free, and vegan dish is a goldmine of vitamins and minerals and I really like how the Instant Pot makes the cooking process so easy.
How to serve beets?
You can eat it as is as a healthy snack. Serve it with butter to taste, or just sprinkle with some herbs, garlic, and a bit of vinegar for an instant and fast beets salad.
It an be also used to make beet soup or even a delicious smoothie.
What are beets?
The beets are root vegetable, and well-known health and immune-boosting goldmine. They have many health benefits, and some studies show that the beets are excellent for heart health, they may lower the blood pressure, and also purify your blood and liver.
Do I need to use a trivet?
Yes. You should place the beets on the Instant Pot trivet. You can use the metal one that comes with the Instant Pot.
If you do not use the trivet, the beets will be directly in the water on the bottom of the Instant Pot. The taste would be the same, but it may result in fall apart beets.
Does the size matter?
As with any root vegetables that come in different sizes, cooking time may vary depending on the size and the texture you like.
Here are some cooking time according to the size of the beets.

Alternatively, you can cut your big beets into smaller pieces in order to decrease the cooking time.
How to serve beets?
Once cooked, let the beets cool down. Peel the beets (or not because the skin is edible) and afterward, slice or chop them. You can serve beets as a side dish, with some fish, goat’s cheese, turn them into a salad, or simply enjoy as a snack.
Good to know: the beets are slightly sweet so they need something acidic (lemon or vinegar) to complement them.
How to make beets?
Gather your ingredients:
Pour 1 cup of water into the Instant Pot and place the metal trivet on the bottom.
Trim the beets and place them on top of the trivet.
Lock the lid into place. Select Manual and set to High pressure. Cook for 15 minutes. You may increase the cooking time depending on your beets’ size.
Once done, perform a quick pressure release.
Peel the beets and serve.
- 4 whole fresh beets unpeeled, with the ends trimmed off
- 1 cup water
- butter to taste. optional.
- Wash and trim the beets. No need to peel.
- Place a trivet in the bottom of the Instant Pot and add 1 cup of water.
- Place the beets on the trivet.
- Close the lid and cook at high pressure for 15 minutes.
- When cooking time ends, perform a quick release.
- Once done, open the lid and peel the beets.
- Serve with butter or any other topping 🙂
