When you want to cook beets but aren't quite sure how, your Instant Pot will never let you down. It's the fastest way to make beets that are perfectly cooked every single time.

The more veggies that you can have for dinner, the better! Beets get a bad rap, and I don't know why! They're actually a really flavorful side dish that pairs perfectly with just about anything.

Beets - Fresh and clean beets are all you need!

Water - Poured into the base of the Instant Pot.

Butter - This is optional but a great way to add flavor. I like you use salted butter.

How to make Instant Pot Beets 

Make sure that you gather up the ingredients before getting started. Since you only need a few of them, don't delay or leave any out.

Step One: Pour the water into the Instant Pot and then add the metal trivet.

You can also use a steamer basket instead.

Step Two: Trim the beets and then put them on top of the trivet in the Instant Pot.

Step Three: Put on the Instant Pot lid and select manual on high pressure. Cook the beets for 15 minutes.

Step Four: Once the time has passed, do a quick pressure release.

Step Five: Peel the beets and serve. You can top them with butter, slice them and drizzle with coconut oil, or just gobble them up once they're on your plate.

Variations

Add seasonings - The best way to flavor beets is to add whatever seasonings you'd like. It can be as simple as sprinkling on some chili powder, or even topping with lemon pepper, too. Beets are basically a blank canvas where you can change them up as much as you want.

Add toppings - I like to add butter to my beets, but you can easily add coconut oil or anything else that you think would be a great flavor enhancer.

  • If you're nervous about peeling the beets, don't be! Once you cook them in the Instant Pot, the skin of the beets will come off super easy!
  • Just be sure that you let the beets cool down slightly before trying to peel them because the skin is going to be really hot.

How to serve 

Stop stressing out over how to serve beets! They're actually a really simple side dish, ever. You can add some butter to it, add your favorite toppings, or just add it as a topping to a salad.

It's also delicious to mix with brown rice and other vegetables as well.

Ingredients

  • 4 whole fresh beets unpeeled, with the ends trimmed off
  • 1 cup water for the Instant Pot
  • butter to taste. optional.

Instructions

  • Clean the beets and trim the ends.
  • Put the trivet into the bottom of the Instant Pot and pour in 1 cup of water.
  • Add the beets directly onto the trivet.
  • Put on the lid and cook at high pressure for 15 minutes.
  • When cooking time is complete, do a quick release.
  • Take off the lid and peel the beets.
  • Top with butter and enjoy!

    1. Good question! First, I would cook the beets according to the recipe exactly. After they are cooked, peel and slice them, then place them into a pickling liquid. A simple pickling liquid would be 1/2 cup vinegar + 2 tbsp of sugar or honey with some salt and pepper. Then let them sit for at least 24 hours and they will be pickled!
