How to make

Gather the necessary ingredients.

Cut the eggplant into slices.

Add 1 tablespoon of salt to the sliced eggplant.

Pour quarter a cup of marinara sauce into the pot.

Add a cup of water to the pot.

Stir the sauce and water and add a quarter of the marinara sauce.

Add a bit of mozzarella cheese.

Add eggplant slices into the pot.

Pour the remaining marinara sauce into the pot.

Add mozzarella cheese on slices.

Cover the lid and pressure cook at high for 3 minutes.

Do a quick release and pour out the mixture.

Add air fryer basket to the pot.

Place the mixture into a bowl and put it on the air fryer basket.

Cover the and air fry at 375F for 8 minutes.

Remove the lid, Dish out the Eggplant Parmesan, and serve!

The best way to serve is to keep it gluten-free for example pasta, crusty bread, fresh salad, white rice.
