This Instant Pot Green Beans and Potatoes just might be my favorite side dish. And when I say side dish, I also mean that I could eat this as an entree daily as well. A bowl of potatoes and green beans with salty and delicious bacon? Count me in every time!

Anything green bean also makes me want to make this for a delicious holiday meal as well. Green beans are so versatile in their pairing options and literally go well with all the different types of meat!

Don't get me wrong. I'm still a huge fan of these simple Instant Pot Green Beans, but I like the added twist with the potatoes and bacon as well.

Why this recipe works

I've never met a green bean recipe I didn't like. I love using fresh green beans because even after they're cooked in the Instant Pot, they still have a great texture and they don't get mushy. Also -

  • You can make this for a fast side dish or use it as a quick and healthy dinner option as well
  • It's a fun way to use fresh veggies in new ways with new flavors

Recipe Ingredients

Onion - I like to use a sweet red onion for this dish. 

Garlic cloves - Minced garlic adds the most flavor. 

Sliced bacon - Cooking bacon in the Instant Pot adds great flavor. You could also use turkey bacon. 

Green beans - Fresh green beans work best. Canned green beans are not recommended. 

Salt and pepper - For taste. 

Chicken broth - chicken stock or bone broth could also be a great option. 

Baby potatoes - Smaller potatoes work best, but bigger potatoes could work as well as long as you cut them down in size. 

How to make Instant Pot Green Beans and Potatoes

Don't start until you have all your ingredients prepped and ready!

Step One: Grab the Instant Pot and press the "saute" button.

Step Two: Add the chopped bacon, minced garlic, and sliced onions. Saute for 3 minutes and stir with a wooden spoon.

Step Three: Next, add the chicken broth, salt, and black pepper.

Step Four: Carefully drop in the baby potatoes.

Step Five: Add the green beans to the Instant Pot and stir a bit.

Step Six: Close the lid and cook on high pressure for 5 minutes.

Step Seven: When cooking time is complete, do a quick release.

Step Eight: Open the lid, serve and enjoy 🙂

Variations

Use frozen green beans - If you can use fresh greens beans that were frozen, that will work! Just be sure to add 60 seconds of cooking time in that case.

Use sweet potatoes - I think that using sweet potatoes would be really delicious!

Recipe Notes

  • Be sure to clean the fresh green beans and snap off both ends to prep them.
  • Use a fork and poke the potato after the cooking time has passed. If the potatoes are fork-tender, they're done and ready to eat.

Do I have to peel the baby potatoes?

Peeling the potatoes is up to you. If you want to skip some of the prep work, it's not necessary to peel the potatoes at all.

Why are my green beans mushy?

Fresh green beans shouldn't get mushy if they're cooked according to the directions.

If they are mushy, you've overcooked them. (they're still edible, though!)

Can I use canned green beans for this recipe?

Canned green beans are not going to work for this dish. Fresh green beans are really the best choice to use.

    I skipped the sauté step, substituted 2 kielbasa, 2 lbs fresh green beans, 2 whole small onions, 10-12 baby potatoes , no salt, and cooked five minutes, easy and delicious!
