Pork chops - When cooking pork chops in the Instant Pot, I typically don't get them too thick. (I save the thick chops for the grill!)
Garlic powder - Perfect for a hint of garlic taste.
Paprika - Smoked paprika would be wonderful as well.
Salt and pepper - To taste.
Olive oil - Coconut oil is a great option as well.
Onion - Slice it up so that it will saute and cook easily.
Small potatoes - You can use small red potatoes or dice up larger potatoes to use.
Chicken broth - Instant Pot Bone Broth is another great option.
Thyme - Excellent for flavor.
Rosemary - Rosemary and pork pairs perfectly.
Chili powder - This can be optional, but it is great for a slight heat.
How to make Instant Pot Pork Chops and Potatoes
Before starting, make sure that you have all the ingredients on hand that you'll need. I promise that it's easier that way!
Step One: Season the pork chops on both sides using pepper, salt, paprika, and garlic powder.
Step Two: Add the olive oil to the Instant Pot and press "saute".
Add the pork chops and saute until the work is brown.
Step Three: Once the pork chops are brown, take them out of the Instant Pot. Then add in chicken broth and the diced onions, and stir using a wooden spoon.
Step Four: Add the pork chops back into the Instant Pot and into the broth.
Step Five: Place a trivet into the Instant Pot and put the sliced potatoes directly on top.
Step Six: Add a little bit of rosemary and dried thyme to the top of the potatoes.
Step Seven: Put on the lid and cook for 5 minutes on high pressure.
Step Eight: Once the cooking time passes, wait for a natural release. Once done, take of the lid.
Serve and enjoy!
Variations
Change up the potatoes - You can use different types of potatoes or even use sweet potatoes as well.
Use rice - If you want to leave out the potatoes, try this Instant Pot Pork Chops and Rice instead.

- Make sure that you coat the pork well in the oil and spices when you add it to the Instant Pot. This is what coats it and gives it seasoning.
- You may need to sear the pork chops in a skillet on the stovetop if you're hoping for an outer crispy crust.

Yes, if you don't want to sear it in the skillet, you can place on the Air Fryer Lid and broil at 375F for 5-10 minutes.
Pork is safe to eat when the internal temperature is 145 degrees. You can check it easily by using a meat thermometer.
All you have to do to store leftovers is let it cool down all the way and keep it chilled in an airtight container in the fridge. Eat within 2 days for best flavor.

- Place a trivet into the Instant Pot and put the sliced potatoes directly on top.
- Add a little bit of rosemary and dried thyme to the top of the potatoes.
- Put on the lid and cook for 5 minutes on high pressure.
- Once the cooking time is complete, wait for a natural release. (or for at least 20 minutes).
- Open the lid, add red chili powder on top, serve and enjoy 🙂

Fixed this for dinner tonight. Followed the recipe but basically cut everything in half as we are empty nester. Also added fresh baby carrots and minced garlic. The taste was wonderful,
I would like to make this a truly one pot meal by adding a veggie to the dish. How do you think it would turn out if I added a 12 oz bag of frozen brussel sprouts with the potatoes? How much should I then adjust the other ingredients? Thanks for any advice!
I think that sounds like a great idea! Brussels sprouts should be fairly sturdy and cook from frozen in that amount of time. Please let me know how it turns out!
