Can I Use Regular Carrots?

This recipe calls for baby carrots to make prep easier, but yes, you could easily substitute regular carrots.

Just peel and cut them into bite-sized pieces.

To cut whole carrots, I like to cut them in half lengthwise and then slice them to create half-moon shapes.

Another fun cut for carrots is known as the oblique cut, in which you roll the carrot in quarter turns and cut on a diagonal to make a sort of rounded triangle shape.

This is just for added visual appeal—any cut of a similar size will work!

Can I Use Frozen Peas?

Definitely! Frozen green peas are much easier to use than shucking fresh peas, plus fresh peas have a relatively short season while frozen peas are commonly available year-round.

Frozen peas cook very quickly so you don’t even have to fully defrost them first!

Just adding to the hot soup, the peas will heat through in about 3 minutes.

Do I need to shell the peas?

You can but you don't have to. Sometimes I shell the peas and sometimes don't 🙂

What Type of Potatoes Should I Use?

This recipe calls for 2 potatoes and 1 sweet potato.

For the regular potatoes, you can use any medium-sized potato—red potatoes, white potatoes, Russet, or Yukon gold will all work well.

If you love sweet potatoes, you can use 2 sweet potatoes and only 1 regular potato, or 100% sweet potato! If you hate sweet potatoes, just leave it out and add another regular potato.

This recipe is very flexible, which is part of its appeal.

What Type of Wine is Best to Cook With?

It is best to cook with a dry wine that you like to drink since there will likely be most of the bottle leftover after using what you need for cooking.

Some dry white wines that work well for this recipe are Sauvignon Blanc or Pinot Grigio.

You can even use a homemade wine :]

If you prefer not to use alcohol, you can replace the white wine with white wine vinegar or a little lemon juice.

  • 2 pound stew beef
  • 2 tablespoon butter
  • ½ cup white wine dry
  • 1 large onion chopped
  • 12 oz. baby carrots peeled and cut into halves
  • 2 potatoes in cubes
  • 1 sweet potato in cubes
  • 1 tablespoon dried thyme
  • cups beef broth
  • 2 teaspoon dried parsley
  • 1 bay leaf
  • ½ teaspoon salt
  • ¼ teaspoon black pepper black pepper,freshly ground
  • ½ cup green peas


  • Season the beef with salt and black pepper.
  • Put the butter and beef in the Instant Pot and select “Sauté”.
  • Sauté for 3 minutes on each side until browned.
  • Add the rest of the ingredients and stir well.
  • Close the lid and cook on high pressure for 20 minutes.
  • When cooking time ends, white for a natural pressure release for 10 minutes, and then release the pressure quickly using the release handle.
  • Add the green peas, stir and reserve for 3 minutes.
  • Serve and enjoy!
