This delicious Instant Pot salsa chicken is hot and sizzling and can be the star of every dinner.

What part of the chicken to use?

You can choose chicken breast or boneless and skinless chicken thighs.

Both options taste great and you cannot go wrong. You can even go with chicken drums. In that case, increase cooking time by 3 minutes.

What Salsa to use?

Go with the desired type or brand of salsa. Feel free to use red salsa, green salsa, or even homemade - it does not matter as long as it is yours favorite.

How to serve?

Serve the Salsa Chicken breasts as a main dish, with some basmati rice or brown rice on the side. It will pair amazingly with baked potatoes. If you have any leftovers, you can use them to make chicken quesadillas, or just sprinkle over mashed potatoes and add cheese on top.

How to Make Taco Seasoning at home?

For homemade taco seasoning, just mix equal parts of paprika, cumin and chili powder.

Then add the desired amount of garlic powder and dried oregano and mix well.

How to make Salsa Chicken

Gather your ingredients:

Season the chicken with taco seasoning, and a pinch of salt and black pepper. Place the chicken into the Instant Pot and top with salsa.

Pour in chicken stock.

Lock the lid into place. Select Manual and set to High pressure for 15 minutes. Once the cooking cycle is done, perform Natural pressure release.

Serve warm. You can Serve chicken in a whole piece or shred.

Ingredients

  • 1 lb frozen chicken breast skinless and halved
  • 1 packet taco seasoning mix
  • ½ cup salsa
  • ½ cup low sodium chicken broth
  • salt and pepper to taste

Instructions

  • Place the chicken in the Instant Pot.
  • Sprinkle taco seasoning on it and make sure it covers all sides.
  • Pour chicken broth and salsa on the top.
  • Close the lid and cook at high pressure for 15 minutes.
  • When cooking time ends, wait for a natural pressure release.
  • Open the lid and serve.

  1. Instant Pots call for no less than 2 cups of liquid in order for them to function correctly. I'm confused as to why there is only 1 cup (1/2 cup of salsa + 1/2 cup of broth) of liquid? I do want to make this. It sounds good & is very easy. Thank you Corrie~

  2. When using boneless/skinless chicken breasts , is the chicken supposed be put in the instapot frozen or should it be defrosted ? Thanks

  3. Fresh or Frozen? The picture shows fresh, the ingredients list says frozen...what is the right time for both ways?

    1. You can use either fresh or frozen. The time listed (15 minutes) is for frozen chicken breasts. If you use fresh, the chicken should be cooked through in just 10 minutes with a natural release.

    1. No, the rice would absorb too much of the liquid and might result in a burn message. It is best to serve it on the side.
