      1. Yes, that’s true. But some people might have nut and gluten allergies, so they might want to use a gluten-free flour blend. Or maybe it’s just what you happen to have on hand! Either will work.

  1. This recipe sounds wonderful and I look forward to making it today! In step number 8 you mention a “trivet”. Is this something that came with my instant pot? I want to be sure what I put in there is safe. Can you elaborate more as to what I should put in there for a trivet? Thanks

  2. I just made this banana bread recipe and it was delicious, I substituted 1/2 cup almond flour and 1/2 cup coconut flour and 1/2 cup rice flour instead of 1 1/2 cups of pure almond flour . It was spectacular, can’t believe this was made in instant pot, I also added a bit of vanilla extract.

    1. Nope! You can use any model, including the Duo. Just set to pressure cook, high pressure, and it will come out perfectly 🙂

  3. Hi Corrie,
Thanks for your many good tips. My banana bread came out very flat and
    too moist. Any suggestions?

    1. This recipe is supposed to come out relatively flat and super moist! To increase the rise, add another 1/2 teaspoon of baking powder. If you’d like it to be less moist, try adding a bit more almond flour to the batter. It will still be pretty moist though, since it is baked in an Instant Pot.

    1. Great suggestion! You could easily adjust the spices to suit your personal taste preferences. So glad you liked the recipe!

  4. Hi! I want to do this wonderful recipe. I do have an instant pot but not a pan that fits on my instant pot. Can I make it on the oven and if yes, what temp and time?

  5. I followed the recipe, and although it tastes great, it came out very dense, with a consistency more like a heavy fruitcake than a loaf of bread.
Do you have a suggestion for making it a bit lighter?

    1. Sometimes over-mixing the batter can cause the bread to come out dense. When mixing, fold the ingredients with a rubber spatula until just combined, and that should help make it a bit lighter!

  6. From a newbie guy cook: I followed this recipe to the letter and it came out very dense & rubbery, ended up in the garbage & I’m left with a bunch of dirty dishes and no banana bread. Searched other recipes & found that the mix should ge stirred minimally or surprise- it turns out dense and rubbery. Most also suggest covering the pan with foil to cut down moisture.

  7. I followed the recipe but I used the powdery brown sugar that you pack in, I didn’t know there was granulated brown sugar. It came out dense and a little sticky/chewy. Is it because of the “wrong” sugar or do you have any suggestions?
