Instant Pot Carnitas
- 2½ pork shoulder chopped into ¾ inch pieces
- 1 tsp dried chipotle powder
- 1/2 tsp cumin powder
- 1 big onion chopped
- 2 cups low sodium hen broth
- 10 wheat tortillas toasted
- Pico de Gallo
- parmesan cheese shredded
Add all the ingredients to the Instant Pot pressure cooker.
Secure the lid and select “Manual” function for 30 minutes at high pressure.
Once done, release the pressure completely then remove the lid.
Shred the meat using two forks and roughly mash the onions with a masher.
Roast the shredded meat for 10 to 12 minutes over a baking sheet until crispy.
Layer the roasted tortilla with onion mixture, crispy pork, Pico de Gallo, Parmesan and guacamole.
Roll the tortilla and serve warm.
