Would love to make this but do not have air fryer lid for my insta pot, can I still make it with regular lid?
I think that you could if you place the bowl on the trivet and put some water in the bottom of the pot (the minimum amount needed). It just won't be crispy on top at all.

Why are you putting cheese on french toast?
It's unique, but since mozzarella cheese is very mild, when mixed with the heavy cream it creates almost like a cream cheese topping. Since cream cheese filled french toast is common. You can leave it out if you prefer!
