French toast is soaked in eggs and milk so having sturdy, durable bread is important.
Having little while old bread additionally assists with durability.
My personal choice is French bread easily available at most supermarkets.
Some other incredible options you can make at home:

Although, you need enough airflow around your pan, so don’t use too large of a pan.
Also, wrap the bottom of the pan in foil as this will keep any liquid from leaking in or out.

Your Instant Pot French Toast will be soggy if you don’t have enough bread in your pan.
There is a fine balance on the bread to egg mixture combination.

Would love to make this but do not have air fryer lid for my insta pot, can I still make it with regular lid?
I think that you could if you place the bowl on the trivet and put some water in the bottom of the pot (the minimum amount needed). It just won't be crispy on top at all.
Sounds good. I have a Crock Pot pressure / slow cooker that could work. Thanks for showing this recipe. Looks good. I do like to bake.
Why are you putting cheese on french toast?
It's unique, but since mozzarella cheese is very mild, when mixed with the heavy cream it creates almost like a cream cheese topping. Since cream cheese filled french toast is common. You can leave it out if you prefer!
Can I leave the cheese off?
Yes, it will still work
