Best recipe ever!!! Thanks you Corrie.
Thank you!!! So glad you think so!
I cubed apples and added them before pressure cooking, then swished a cinnamon stick in the serving dish…..Yum!
Wow, yum!! Such a great idea!
Made this recipe this evening. When I looked at your pictures, I didn't think you got much out of 1-lb of cranberries, so I bought three of the 12-oz. bags of Ocean-Spray Cranberries and a large navel orange. I weighed out 2-lbs of cranberries leaving about half a bag unused. I rinsed the cranberries and drained them well in stages and put it in my instant pot. Then I took my big orange and zested the heck out of it. Hard to measure, but it was plenty, so I dumped that on top of the cranberries. Then I cut my orange in half and squeezed over a fine mesh strainer to catch any junk or seed if you're using an orange with seeds in it. Since I doubled the batch I was looking for 2/3-cup of Orange Juice and just barely missed having enough. So took some bottled OJ out of the fridge and topped it off before dumping it in. Then I dumped in two cups of sugar, put the lid on; checked to make sure the vent was sealed; turned it on manual; and set it for 3-minutes instead of two.
Took 15 to 20 minutes to come to pressure and then the 3-minutes just flew by. Opened it up and mixed it well and then tasted it. Took some to my wife for her opinion. We agreed it was a bit too tart and needed a bit more sugar. Added about 1/3 cup of sugar and stirred it in well. That did it just right.
This is a delicious cranberry sauce with a touch of orange and very easy to make. I would not suggest doubling the recipe unless you have lots of friends to share it with... 2-lbs. of cranberries really made a LOT!
Was impossible at either of our local supermarkets to buy cranberries by the pound and they only come in 12-oz. packages now. I think next time I'm going to just get one 12-oz. package and use the rest of the recipe measurements for your 1-lb recipe. Sugar should be about right with that and you'll still have plenty of cranberry sauce.
This is REALLY GOOD!!!
Awesome, thanks for your comment! You could definitely make this recipe with 12 ounces. It's a very flexible recipe to adjust based on your preferences, as you discovered. That's good to know about the package size.
I just made two 12 packs I make a packet with cinnamon stick and while cloves and add that. So flavorful you can cut back on the sugar. I share this with neighbors at Thanksgiving. Super easy!! Doesn’t last long at our house
Wow, that sounds excellent, great idea! Thanks for sharing!
