The meat is tender and very juicy. A light tomato sauce perfectly sets off the taste of meat, and garnishing the dish with vibrant cilantro balances the whole meal.

Pork is notoriously difficult to cook just right. It is extremely prone to drying out if overcooked, but when not cooked enough you face the potential of food borne illness.

Thanks to your instant pot, that’s no longer an issue! Cooking pork in the instant pot promises perfectly cooked, moist and juicy pork every time.

What Cut of Pork Should I Use for this Recipe?

This recipe is meant for a pork tenderloin or a pork loin that is cut to approximately 1 lb in size.

Do I Need Both Garlic Powder and Garlic Cloves?

Fresh garlic is essential to the flavor of this dish—I would definitely prioritize the fresh garlic over garlic powder.

Garlic powder is simply garlic that has been dehydrated and pulverized. Using a combination adds to the depth of flavor.

If you don’t have garlic powder, the dish will still come out well if you don’t use it. You may just want to add a couple extra cloves of garlic if that’s the case to make sure it comes out just as flavorful as the original recipe.

Why Beef Stock?

I like beef stock for this recipe because it adds a deep savory flavor and color that goes well with the heavy amount of garlic. I recommend using a low-sodium variety, or tasting before you add the full amount of salt to make sure it tastes good to you.

If you’d like, you could definitely use chicken stock in place of beef stock, but it will be a little different flavor.

Can I Use Canned Tomatoes?

This recipe calls for fresh crushed tomatoes since it only uses two tomatoes, it eliminates waste.

If you have a use for canned tomatoes elsewhere, you could definitely use canned crushed tomatoes in this recipe and save the remainder of the can for another use. This is a good option, especially when tomatoes aren’t in season!

  • 1 pound pork
  • 10 garlic cloves cut in half
  • 3 tablespoon garlic powder
  • 1 tablespoon salt
  • 1 tablespoon tomato paste
  • 1 cup beef stock
  • 2 tomatoes crushed
  • 1 onion chopped
  • 3 tablespoon olive oil
  • 1 cup cilantro


  • Put the olive oil and the onions in the Instant Pot and select “Sauté”.
  • Sauté for 2 minutes and add garlic cloves.
  • Sauté for 1 minute and add the pork.
  • Sauté for 2 minutes on each side till its brown
  • Add the rest of the ingredients and cook at high pressure for 45 minutes.
  • once done, wait for a natural pressure release.
  • Take it out and garnish with cilantro.

    Okay, we officially tried the recipe last night. My family kept insisting I was a rock star. I told them the Corrie Cooks was the one their standing ovation should be directed to. Soft, tender, garlicky, melt-in-your-mouth pork goodness. I served with rice and instant pot pan gravy. I added cayenne because I add it to everything and that’s just how I roll (I’m a spicy meatball). Definitely in our rotation! Beautiful recipe!

  3. Is there a replacement for the cilantro? Several members of our household do not eat cilantro? Thanks. Would fresh parsley work?

    1. Definitely! It's just a garnish so you could use whatever herbs you'd like. Parsley would be an excellent substitute.

  4. Can you please tell me what 2 tomatoes, crushed means? Do you mean actual tomatoes? Or canned. I pinned this for sure! Thank you.

    1. You can use both 🙂 I used fresh ones for the recipe but you can use canned for sure.
      Small can would be enough for this recipe.
