What Size is the Average Lamb Chop?
If you don’t know how big or small your lamb chops really are in comparison, it might help to know more about lamb chop sizes. The average American lamb chop is 3-4 ounces, but lamb chops from New Zealand or Australia are smaller.
This recipe is based on the average size lamb shop, but the size can vary quite a bit. If yours are larger, you may want to add another minute or two to the cook time.
Where is the Best Lamb From?
This is a matter of opinion, but it’s interesting to note that the taste of lamb (in addition to the size) varies between different countries.
In most places, lamb is grass-fed, but in the United States, lamb is often grain-finished. This means American lamb has more marbling and a slightly more mellow flavor profile in comparison.
In New Zealand, lamb is typically slaughtered at a younger age, which accounts for the size difference and also the tenderness of New Zealand lamb. Which one you like best is really just a personal preference!
Why Beef Broth for Lamb Chops?
Lamb broth isn’t widely available, but if you do get your hands on some you can definitely use that!
I use beef broth here because it’s the most robust option and compliments the flavor of the lamb chops best in my opinion.
You can absolutely use chicken broth of vegetable broth instead though. Quantities will stay the same either way.
Why Do You Crush the Basil Leaves?
Crushing basil leaves releases their aromatic compounds, so you get the most flavor extraction this way. This is the same reason for crushing the dried oregano.
You could also use fresh oregano instead of dried oregano. I just love the smell of fresh oregano and basil together! We call for dried oregano in this recipe since it’s more easily accessible. Fresh basil is more widely available than fresh oregano generally.
Can I Use Dried Herbs Instead of Fresh?
Yes you can, although I prefer the brightness of fresh herbs in this simple recipe. Fresh herbs also provide a nice garnish for the final dish. Save a few sprigs of fresh basil or rosemary and hold aside to place on top of the cooked lamb chops, like in the photo.
If using dried basil, use about 1 teaspoon for similar flavor intensity. You can also use 1 teaspoon dried rosemary in place of the rosemary sprig.
Can I Use Italian Seasoning?
Yes—Italian spice blends typically include basil, oregano, and rosemary as main components. They may also contain small amounts of thyme, garlic powder, or sage, but those are all fine to use in this dish and it will have a similar flavor.

Ingredients
- 3 lb lamb chops
- 1 cup beef broth
- 3 tablespoon olive oil
- 2 teaspoon dried oregano crushed
- 3 basil leaves crushed

Instructions
- Rub your lamb chops with salt, pepper and dried oregano.
- Pour oil into the Instant Pot, add garlic, rosemary, basil and bay leaf. Select “Sauté”.
- Add the lamb chops and cook for about 4 minutes per side, until they brown.
- Add the beef broth and lock your Instant Pot.
- Cook at high pressure for 4-5 minutes (depending on the size of your lamb chops).
- Once done, do a quick pressure release and serve.
