Instant Pot Kale

Fresh kale - You can buy this at the store or grow it in your garden. Keep in mind that kale "shrinks" as it's cooked so even if you cook a full bag, it's going to be a lot smaller portion once it's ready. 

Water - Helps the steaming effect in the Instant Pot. 

Garlic - Minced garlic adds great flavor but garlic powder can be used, too. 

Olive oil - You can also use coconut oil or avocado oil. 

Salt - To taste. 

How to make Instant Pot Kale Greens 

Gather up the simple ingredients to get started! You'll love how fast the prep for this kale recipe is!

Step One: Add the fresh kale into the Instant Pot.

Step Two: Pour in the water and put on the Instant Pot lid.

Step Three: Cook on high pressure for 3 minutes.

Step Four: Once the time has passed, do a quick release and scoop out the cooked kale. Add it to a strainer to drain off any excess water.

Step Five: Put the cooked and drained kale back in the Instant Pot and add the olive oil.

Step Six: Add the salt and stir.

Step Seven: Add the minced garlic and press the saute button.

Step Eight: Stir the kale with a wooden spoon and saute for 2 minutes.

Variations 

Add bacon - Yes, bacon! It's a great way to add protein and extra salt flavor. You an cook them together, or make bacon separately using this Instant Pot Bacon recipe.

Change up the seasonings - Salt is great, but you can easily add garlic powder, onion powder, Italian seasoning, or even just some Everything Bagel Seasoning, too.

  • There are many different colors and types of kale. This simple recipe will work with green kale and all types or colors of kale, as well as all types of flavors.
  • Even though the cooked kale shrinks down quite a bit, don't eat all of it in one sitting. Kale has a HIGH fiber amount, and it may cause stomach issues if eaten in excess.

Ingredients

  • 1 lb fresh kale tough ends removed and chopped roughly
  • ½ cup water
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • salt to taste

Instructions

  • Add the fresh kale into the Instant Pot. Make sure that it's trimmed and ready to go.
  • Pour in the water.
  • Close the lid and cook on high pressure for 3 minutes.
  • Once the time has passed, do a quick release and scoop out the cooked kale. Add it to a strainer to drain off any excess water.
  • Put the cooked and drained kale back in the Instant Pot and add the olive oil.
  • Add the salt and minced garlic and stir.
  • Press "saute", stir, and saute for 2 minutes.
