Scallops:

You can choose either fresh or frozen scallops to use in this air fryer recipe. However, if you do choose to use frozen scallops, you will want to add 1 or 2 minutes of cooking time, or simply allow them to thaw before cooking.

Shrimp Fritters:

The star of this dish, the breaded shrimp fritters, can be bought frozen and prepared for this recipe quite easily. However, you can also make your own homemade breaded shrimp fritters.

Using peeled and deveined shrimp, simply dredge them in some all-purpose flour, then in an egg wash, and finally in a bread crumb mixture consisting of either regular bread crumbs or panko breadcrumbs and your favorite seasonings. Finish off your breaded shrimp in air fryer or use the air fry function on your Instant Pot for some fresh golden brown fried shrimp.

Lemon Juice:

Anytime you are cooking seafood in your Instant Pot, it's important to add some citrus juice to help tenderize your fish during the cooking process.

Seasonings:

Even though this Instant Pot fried shrimp recipe only calls for salt and black pepper, you can always feel free to think outside the box and use whatever seasonings you like. Add some red pepper flakes and smoked paprika for a bit of kick, or keep it simple with some lemon pepper.

How to Make Instant Pot Fried Shrimp

Step One: Add butter, onions, and garlic to your Instant Pot and saute for 10 minutes, stirring occasionally.

Step Two: Add mushrooms, scallops, hoisin sauce, white wine, soy sauce, lemon juice, salt, and pepper. Stir to incorporate.

Step Three: Pressure cook on high for 5 minutes.

Step Four: Wait for a natural release, carefully remove the lid, and set cooked mushrooms and scallops aside in a separate bowl.

Step Five: Insert your air fryer basket, coat it with cooking spray, and add shrimp fritters.

Step Six: Air fry for 6 minutes at 320F.

Step Seven: Plate your mushroom and scallop mixture into separate bowls, then place shrimp fritters on top.

Step Eight: Serve and Enjoy

  • 2 tablespoons butter

Instructions

  • Close the lid and cook on high pressure for 5 minutes.
  • Wait for a natural pressure release (or for at least 20 minutes). Once done, open the lid and set cooked mushrooms and scallops aside.
  • Insert the air fryer basket and add shrimp fritters.
  • Air Fry at 320 °F for 6 minutes.
  • Plate your mushroom and scallop mixture, then top with your shrimp fritters.
