Instant Pot Chicken Gnocchi Soup

Let's just all agree that a piping hot bowl of Instant Pot Chicken Gnocchi Soup just might be the ultimate winter comfort dish. Not only is it loaded with chicken and veggies, but there's no denying the creaminess of the broth as well.

I've tried to stop myself from having just one bowl - but it's pretty much impossible to do. This is why I love cooking this gnocchi soup recipe in the instant pot - because it makes such a huge portion for me to enjoy over and over again!

Pairing the bites of gnocchi with the tender bits of chicken is literally the perfect consistency and texture. This is a great gnocchi soup recipe to make for a crowd or to whip up and enjoy all weekend long.

Recipe Ingredients

Onion - I like using sweet onions, but any type of onion will be fine.

Garlic - Minced garlic is my garlic of choice.

Celery - Adding diced celery adds a nice crunch. You can also use chopped-up bell peppers.

Carrots - Strips of carrots add crunch and natural sweetness.

Chicken Broth - You can use any type of broth that you want. Instant Pot Bone Broth is a good choice as well.

Chicken Breast - you can use cubes instead of sliced chicken breasts.

Thyme - Adds a nice mint flavoring.

Black Pepper - To taste.

Potato Gnocchi - These dumplings are soft and delicious. You can also swap out and use potatoes.

Milk - Adding milk gives this recipe a nice creaminess.

Spinach - A few greens are great for adding extra nutrition and health benefits.

How to make Instant Pot Chicken Gnocchi Soup 

Gather up the needed ingredients and get ready to create the best gnocchi recipe ever.

Step One: Add 1 tablespoon of Olive Oil into the Instant Pot and press saute at high for about 7 minutes.

Step Two: Add onion.

Step Three: Add garlic.

Step Four: Add one chopped piece of celery.

Step Five: Add ½ cup of cut carrots.

Step Six: Pour in 1 cup of Chicken Broth and then add 4 pieces of sliced chicken breasts.

Step Seven: Add one teaspoon of salt, one teaspoon of thyme, and one teaspoon of black pepper to it. Stir.

Step Eight: Now add 16 ounces of Potato Gnocchi.

Step Nine: Pour in ½ cup of milk.

Step Ten: Add one cup of chopped Spinach and mix it with a wooden spoon.

Once mixed, put on the lid and pressure cook it at high pressure for 5 mins.

Step Eleven: Once the time has passed, do a quick release and open the lid.

Serve and enjoy. Feel free to add parsley on top.

Variations

Add more veggies - You can never go wrong with adding in other vegetables. Mushrooms would be a great addition, as would the superfood kale!

Use coconut milk - If you want to add a hint of sweetness, using a little bit of coconut milk is a great option.

Helpful Tips

  • For the best texture, try and cut the chicken into the same size pieces as the gnocchi.
  • Make sure that you're using a wooden spoon when you stir inside the Instant Pot so that there aren't any scratches.
  • If you have leftover cooked chicken, you can add that and use it instead!

How to Serve

You can serve the Instant Pot Chicken Gnocchi Soup with a fresh garden salad or a side dish of Instant Pot Broccoli and Cauliflower. Talk about a healthy dish!

You can also serve on a bed of rice as well. There are so many options!

Do you have to boil gnocchi before cooking?

No, you don't have to cook the gnocchi before adding it to the Instant Pot. The mixture that you're adding it to will be hot enough to cook it just fine.

Can you overcook gnocchi?

Yes, it's possible to overcook gnocchi. While it will still be edible, it will be mushy if it's cooked too long.

Is gnocchi meant to be chewy?

Gnocchi shouldn't be chewy. It should have a soft texture that almost melts in your mouth.

Ingredients

  • 1 tablespoon olive oil

  • 2 teaspoon garlic minced

Instructions

  • Add potato gnocchi, milk and spinach and stir well.
  • Close the lid and cook on high pressure for 5 minutes.
  • When cooking time is complete, do a quick pressure release.
