Ingredients
Garlic clove - Garlic powder is a great option as well.
Spinach - Fresh spinach is great, but fresh kale is awesome, too.
Onion - Diced anion adds a great texture and taste. I like to use sweet onions.
Olive oil - Coconut oil is great as well.
Chicken broth - You can also use Instant Pot Bone Broth if you'd like.
Canned tomatoes - If you have fresh tomatoes, use them!
Tortellini - Buy them premade at the store! (save yourself some prep time!)
Balsamic vinegar - Adds a huge pop of flavor.
Chicken - Leftover chicken or rotisserie chicken works great.
Black pepper - To taste.
How to make Instant Pot Chicken Tortellini Soup
Gather up the needed ingredients to get started.
Step One: Add the chopped onions into the Instant Pot.
Step Two: Add the olive oil.
Step Three: Press the sautee button at normal for 7 minutes, and then add chopped garlic cloves into the pot.
Step Four: Add a warm cup of chicken broth.
Step Five: Add some of the canned tomatoes.
Step Six: Add a cup of tortellini and a bit of balsamic vinegar.
Step Seven: Add some chicken to the pot.
Step Eight: Add the black pepper and the spinach.
Step Nine: Stir, serve, and enjoy!
Variations
Add other greens - Spinach is great, but don't forget about kale and even bok choy.
Change up the pasta - Even though tortellini is the star of this soup, you can easily change it up and use other types and even use Spaghetti Squash or Zucchini Noodles
Recipe Notes
- The texture of the chicken matters! I think that shredding the cooked chicken and adding it is the best texture with the rest of the ingredients.
- You can buy tortellini that is cheese-filled or other types of filling to easily change up the flavoring as well.
How to serve
The best way to serve soup is to pair it up with toppings and side dishes. Adding a side salad or a nice piece of crunchy bread would be my top suggestions!

Recipe FAQs
I don't recommend freezing tortellini soup. The pasta can change its texture and become mushy.
This doesn't mean that you can't freeze all soups because some of my favorite soups, like Butternut Squash Soup or Chicken Noodle Soup can be frozen just fine.
Even though I don't recommend freezing this soup, you can store the leftovers in the fridge for up to 3 days.
To reheat, you can put them in the microwave or low and slow on the stove.
You can add Instant Pot Cauliflower Rice for texture, chili flakes or red pepper flakes for spice, and even more veggies!

Instructions

- Add a cup of tortellini and 1 teaspoon of balsamic vinegar.
- Add 1 cup chicken to the pot.

How does this soup get hot? The only places I see any heat involved in this recipe are to cook the on sauté for 7 minutes and later to add warm chicken broth. I don’t even see where the tortellini get cooked. What am I missing?

You can use either. Fresh tortellini will cook very quickly, while dried tortellini might need a little longer to be fully cooked.

No need to cook it under pressure. I would refer to the instructions on your tortellini to make sure they are in the hot broth long enough to be heated through. And thank you!
