Why This Recipe Works
Making Charro Beans in an Instant Pot is simple, easy, and requires no effort. You don’t have to soak the beans for hours like in old times. The amazing thing about this recipe is that the beans are cooked in chicken stock, which not only makes it healthier but also adds a unique and different taste too.
All you have to do is put the dried beans into the instant pot with some seasonings, and cook for 30 min. That’s all! Enjoy them for breakfast, lunch, or dinner!

Recipe Ingredients
Bacon- furnishes the recipes with a crispy texture, saltiness, and fats from starters to entrees to dessert. The addition of bacon in this recipe will satisfy your bacon cravings even more just because of its unmistakable sizzle and smell.
Garlic - is known for its health benefits as it lowers blood pressure and also has antioxidant properties. Using a clove or two of garlic in this recipe will also enhance the flavor of charro beans. I used it in garlic shrimp too and it provides a unique cooking flavor.
Beans - this recipe uses dried charro beans. These small white-colored beans are a good source of manganese, folate, copper, and other vital nutrients.
How to make
The recipe does not demand a big list of ingredients and steps, just follow these simple steps.
Gather all your ingredients near the instant pot:
Chop two cloves of garlic.
Next, shred the onion into small pieces with the help of a knife.
Cut the stripes of large bacon into small pieces and keep them aside.
Now take the instant pot and add chopped onion and garlic to it. Mix them well till they are completely blended.
Once the bacon is browned, add one and a half cups of the boiled bean into the pot.
Next, add a little salt to it.
Add one tablespoon of black pepper into the pot.
Add 1 tablespoon thyme followed by cumin powder to it.
Also, add some bay leaves to impart flavor.
Add the coriander leaves to the pot as toppings.
Lock lid into place. Cook the beef under High pressure for about 5 minutes. Perform a quick pressure release once the cooking cycle is done.
Dish out and use some Parsley to garnish it. 🙂
How to Serve
Your Instant Pot Charro beans are ready to serve. You can serve white beans, legume-based salad, and green salad as side dishes.
It is a healthy and ambrosial dish with an amazing flavor. It is very friendly for my other two beans recipes that go by the name of Instant Pot Lima Beans and Pinto Beans.
FAQ About Instant pot Charro Beans
Can I store it for later?
Yes, You can store the instant pot charro beans by putting them in an air-tight container after refrigerating them if you are storing the leftovers for the next 2-3 days.
Can I soak the beans first or use canned?
Rather than purchasing canned beans, I utilize Instant Pot to cook them from dry, no soaking is required!
If you decide to soak the beans first, check your machine manual since cooking time will be more limited.
I likewise incline toward dried beans over canned in light of the fact that they are significantly more economical, healthier, and better.

Notes
- You can add salt even after charro beans are cooked, If you add before cooking beans would be tougher.
- If the beans take so long to cook this is just because beans are old. Check the date before buying.
- Acidic Ingredients with beans take longer to cook.
1 tablespoon of salt for 1/2 cup of beans seems like too much. Is that a correct measurement?
You can use 1 teaspoon or simple salt to taste 🙂
I don’t understand: are you supposed to boil the beans first, and for how long?
For this recipe I use leftover beans that have already been cooked, or you could also use canned beans.
