Ingredients

  • 2 pork loin chops boneless 1¼ inches thick
  • ยฝ teaspoon white sugar
  • ยผ teaspoon salt
  • ยผ teaspoon sesame oil
  • ยฝ tablespoon light soy sauce
  • ยผ tablespoon dark soy sauce
  • 1 small onion sliced
  • 2 garlic cloves minced
  • ยฝ shallot diced
  • 4 mushrooms sliced
  • 3 tablespoon tomato paste
  • 1 tablespoon ketchup
  • ยฝ tablespoon peanut oil
  • ยฝ teaspoon white sugar
  • ยฝ teaspoon Worcestershire sauce
  • ยฝ cup water
  • salt to taste
  • black pepper to taste
  • 1 tablespoon cornstarch mixed with 1 tablespoon water

Instructions

  • Mix together ¼ teaspoon of salt, ½ teaspoon of sugar, sesame oil, light soy sauce and dark soy sauce in a bowl and add pork chops to marinate.
  • Set the instant pot to “Sauté” mode and add peanut oil and marinated pork chops.
  • Sauté for about 2 minutes on each side and dish out.
  • Add shallots, onions, mushrooms and garlic in the Instant Pot.
  • Sauté for about 3 minutes and add mushrooms, salt and black pepper.
  • Add โ…› cup of water and mix thoroughlywith a wooden spoon.
  • Mix together ketchup, tomato paste, ½ cup of water, ½ teaspoon of sugar and ½ teaspoon of Worcestershire sauce.
  • Add the mixture to the Instant Pot along with the pork chops.
  • Close the lid and cook on high pressure for 2 minutes.
  • When cooking time is complete, wait for a natural pressure release.
  • Take out the pork chops and press "saute"
  • Add more salt, pepper and cornstarch with water and sauté for 3 minutes.
  • Drizzle the tomato sauce over the pork chops and serve ๐Ÿ™‚

  1. It doesn't say where the sesame oil goes and it also has the 1/2 tsp. sugar in the marinade and the sauce. I just did my own thing and it came out okay but would like to know how the recipe should really read.
