Beef Tripe- is cows' belly meat. A rich and fatty cut from cows stomach and the main ingredient of instant pot Menudo. It has a unique rubbery texture and that's the factor that makes the recipe special.

Ancho dried chili- gives mild spiciness to the menudo and enhances the overall flavor of the dish. It is the most common type of chili used in Mexican dishes.

Guajillo dried chili- another very famous kind of chili in Mexican cuisine is widely used in salads, salsas, tacos, and various meat dishes. Guajillo chili is considered to have a moderate level of spice and adds a little heat to the overall recipe

Garlic-sauteed garlic at the base of any stew or soup just adds in the essential aroma and provides a mild flavor

Onion-widely used among stews and soups onions are known to have great health benefits. The organic sulfur compounds present in onions have cholesterol-lowering properties and thus reduce the risk of heart disease and stroke.

How to make

Gather all the ingredients required for the recipe

Add avocado oil and ½ onion in the instant pot and saute at high for 5 minutes.

Now put garlic cloves into the instant pot.

Add some dried ancho chilies

Add dried guajillo chilies and pour 2.5ltrs of water in the cooking pot

Add chicken seasoning and cook

Take out the cooked chilies and blend them in a blender

Pour the blended paste into the instant pot and add bay leaves

Put beef belly in the pot

Add corn into the mixture.

Add some salt

Cook at high pressure for 25 minutes

Serve hot

How to Serve 

Once ready dish it out in a bowl. Serve it hot with some garnishes as it's a whole meal in itself.  Menudo can also be served with some toasted and crispy tortillas or bread. You can have it for lunch or dinner.

  • 2 tablespoon Avocado oil
  • ½ Onion
  • 2 Garlic Cloves
  • 4 Dried Ancho Chilies
  • 5 Dried Guajillo Chilies
  • 2.5 liters Water
  • 4 tablespoon Chicken Seasonings
  • 2 Bay leaves
  • 1 Kg Beef Belly
  • 1 Cup Corn
  • 1 tablespoon salt


  • Saute onion in avocado oil for 5 minutes in the instant pot
  • Now add garlic cloves, ancho chile guajillo chilies, water and, chicken seasonings and cook
  • Take out the cooked ingredients including ancho and guajillo chilies and blend them in a blender
  • Pour the blended paste into the instant pot, add bay leaves in it, and put beef belly pieces
  • Add 1 cup of corn and salt to it and cook for 25 minutes at high pressure
  • Let the pressure release naturally
  • Dish it out, and serve
