Do I have to use chia seeds?
No. And then you can a recipe with only 3 ingredients 🙂

For this recipe, feel free to use all varieties of figs (green, purple, red ...). .
How to choose the figs?
Choose only completely ripe figs since they are better for jam (and also cheaper!).

Instant Pot Fig Jam
Ingredients
- 1 lb fresh and ripe figs
- 2 tablespoon honey
- 2 tablespoon lemon juice
- 1 tablespoon chia seeds
Instructions
- Wash and chop the figs .
- Place figs, lemon juice and honey in the Instant Pot and stir.
- Close the lid and cook at high pressure for 3 minutes.
- When cooking time ends, do a quick pressure release.
- Open the lid. With a hand mixer, mix the figs until the texture is smooth.
- Add chia seeds and mix well.
- Put the jam in a jar and place in the fridge.

Hi,
First, thank you for sharing a simple recipe. It's a good one for first-time jam makers in an instant pot. I do have a question/comment. Mine came out more like an apple sauce consistency, not much of a jam consistency. I did add the chia seeds. I'm wondering if that's the way it should be. Am I missing something?
Can chia seeds be omitted
Yes, the consistency will be a little thinner since chia seeds help thicken. But it still works!
I am processing 6 pounds of figs. Do I need te increase the pressure time?
I would maybe increase to 5 minutes to be safe.

Can i freeze the jam in plastic containers
Yes you can. Make sure to leave a little bit of room in the container since it may expand when frozen.
Does the size of the Instant Pot matter? Mine is a 6 quart. Thanks!
That's perfect. A standard 6-quart works for nearly all Instant Pot recipes. You only run into problems with scaling recipes if you have a mini or XL version.
Can you process the jars like canning?
I'm not sure. Since figs are low in acid and there is no added sugar in this recipe, it is not the safest option for canning.
This is a great way to use an abundance of figs. I was skeptical that it would “set” into jam when the lid was removed with the amount of moisture produced, but with a stir the moisture was gone and it set great once cooled. Way easier than cooking on the stovetop for 50+ minutes!

I just made two batches, one with honey and the other with unrefined cane sugar. The one with honey turned out be tastier. It's amazing with such small amount of sweetener it's sweet enough! I have a question: How long does it last in the fridge with this small amount of sweetener?
That's great! It should still last for at least one month in the fridge.
Would subbing maple syrup or stevia work, instead of honey?
Yes, you could sub. maple syrup here. Stevia might be a little different consistency but you could try it.
