Ingredients

  • 6 Crepini wraps
  • 4 ounces chilled cooked rice noodles
  • 2 bell peppers cut into slices
  • 1 red onion cut into slices
  • 1 carrot cut into slices
  • scallion to taste

Peanut Dressing

  • 3 tablespoon peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 2 teaspoon soy sauce
  • 1 teaspoon maple syrup
  • ½ teaspoon sesame oil
  • salt and pepper to taste

Instructions

  • Add all the dressing ingredients to make the peanut dressing in a bowl.
  • Whisk properly to get a smooth dressing.
  • Lay all the wraps on a surface and add rice noodles, bell peppers, carrot, onion and scallion inside the wraps.
