A peasant and “poor” recipe showing how old-fashioned comfort food can be addictive too. Tender meat and fresh spring vegetables will perfectly combine with the hearty flavor of shiitake mushrooms and the spicy note of ginger and chili pepper. You can either use beef or veal (which is way more expensive though).
Instant Pot Special Beef Shanks
- 1½ lb beef shanks
- ½ cup beef broth
- 2 cm ginger root peeled and grated
- 3 cloves garlic minced
- 2 shiitake mushrooms sliced
- 2 stalks celery chopped
- 2 carrots chopped
- 2 spring onions chopped
- 1 parsnip chopped
- 2 tbsp rice wine
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp chili pepper
- salt to taste
Cut your beef shanks into small cubes.
Pour sesame oil, rice wine, soy sauce and honey into your Instant Pot.
Add meat, chopped vegetables, garlic, ginger and chili pepper and stir to combine.
Press “Sauté” and cook for about 3 minutes, until meat browns on each side.
Add beef broth and cook at high pressure for about 10 minutes (according to the size of your beef chops).
Let the steam release naturally and serve.
