  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder

  • ½ teaspoon salt
  • ½ teaspoon black pepper

  • 3 lb pork roast boneless and cubed
  • 2 tablespoon olive oil
  • cup cider vinegar
  • ½ cup BBQ sauce divided
  • 1 ¼ cup chicken broth

Instructions

  • In a bowl, mix brown sugar, paprika, garlic powder, salt, pepper, onion powder and cumin.
  • Season pork with this mixture on all sides.
  • On another bowl, whisk together cider vinegar, ¼ cup bbq sauce, and 1 cup of chicken broth.
  • Turn on the Instant Pot, select saute and add oil.
  • Once oil is heated, add pork and saute for a few minutes until brown.
  • Take out the pork and place aside.
  • Press "cancel" and add the remaining broth to deglaze the bottom.
  • Add the pork and the liquid mixture.
  • Close the lid and cook on high pressure for 50 minutes.
  • When cooking time is complete, wait for a natural pressure release for 10 minutes.
  • Once done, open the lid and take out the meat.
  • Shred the Pork.
  • Stir with remaining bbq sauce and serve 🙂

    I make this recipe frequently and it makes delicious moist pulled pork and I don't have to tend the smoker for hours. A couple of hints: (1)Use your favorite rib/pork rub to save time. (2) If you are using a bone-in pork shoulder throw the bone in the pot for extra flavor. (3) Optional: After shredding the pork on a baking sheet pour some of the liquid form the pot over the pork and slightly crisp the ends under a broiler.

    1. Add 1/4 cup into the mixture that goes into the Instant Pot. Then the amount you mix in the end is up to you and your personal preference. I think 1/4 cup is good (so you'd need 1/2 cup total). I see the confusion in the recipe, so I will update that now. Thanks!

    1. The photos show the size of the cubed pork in the instant pot. It looks like the chunks are large enough that about 3 chunks cover the bottom of the pot
