A hearty, tender and juicy meatloaf recipe that will be loved by your family and friends. The sweet and tangy sauce complements the meatloaf perfectly and enhances the flavor greatly.

Ingredients
- 2 lb ground beef
- ½ cup breadcrumbs
- 2 tablespoon ketchup
- 1 tablespoon onion powder
- 1 teaspoon soy sauce
- 1 egg beaten
- salt and pepper to taste
Sauce
- ¼ cup ketchup
- 2 tablespoon brown sugar
- 1 teaspoon soy sauce
Instructions
- In a large bowl, mix the beef with the breadcrumbs, ketchup, onion powder, soy sauce and egg. Mix everything with until well combined
- Form a loaf and wrap it in aluminum foil, living the top open
- Place the wire rack at the bottom of the instant pot and add water. Place meatloaf in the aluminum foil on top of the rack
- Close the instant pot, select manual high pressure and cook for 25 minutes
- During that time make the sauce for the meatloaf
- Let the pressure go down naturally for 5 minutes
- Remove the rest of the pressure, and open de lid
- Remove the meatloaf carefully and add sauce on top
- Serve Hot

Can you put the mixture in a loaf tin and then cook it pot in pot like cooking a cake? If so will I still need to cover with foil? Also would want to do it with Quorn mince as am a vegetarian.
Yes, you could absolutely do it that way. Still cover with foil. Sounds great!
I followed the recipe and the meatloaf was still raw in the middle. I recommend adding 5 minutes to the cook time.
