4
whole fresh beets
unpeeled, with the ends trimmed off
1
cup
water
for the Instant Pot
butter
to taste. optional.
Instructions
Clean the beets and trim the ends.
Put the trivet into the bottom of the Instant Pot and pour in 1 cup of water.
Add the beets directly onto the trivet.
Put on the lid and cook at high pressure for 15 minutes.
When cooking time is complete, do a quick release.
Take off the lid and peel the beets.
Top with butter and enjoy!
Notes
If you're nervous about peeling the beets, don't be! Once you cook them in the Instant Pot, the skin of the beets will come off super easy!
Just be sure that you let the beets cool down slightly before trying to peel them because the skin is going to be really hot.
You can use the metal trivet that comes with your Instant Pot or a silicone steamer basket.
