    I am a true cajun,,,,born and raised in south Louisiana. In my experiences red beans and rice and sausage is a stand alone meal in itself and doesnt require any side dishes other than maybe a green salad and garlic bread. Perhaps that is because when we cook it there is enough sausage in it to satisfy any craving for meat. I have made it countless times and never felt the need to include any other side dish.
