I want sliced hard boiled eggs on my biscuits and gravy. We didn't always have sausage in the gravy, but we always had hardboiled eggs. The gravy is a nice counterpoint to the dry egg yolks. Sunset French Provencial Cookbook included a recipe for day-old pain ordinaire (french bread) with bechamel / white sauce and sliced hard boiled eggs. Mom's Mom was French.
