Celery Stalks -  Clean and chop them into pieces.

Garlic Cloves - Chop them into small pieces. Garlic powder can be used in a pinch.

Carrots - You can chop up baby carrots or peel long carrots and chop them up as well.

Onion - I like to use red onions for this dish, but you can use any type that you'd like.

Dried Basil - The flavor of the basil really brings it all together!

Diced Tomato - You can dice fresh tomatoes or use canned diced tomatoes as well.

Vegetable broth - you can replace with chicken stock or use water with spices instead.

Vegan cream - You can use regular cream but then it won't be vegan anymore 🙂

How to make Instant Pot Tomato Basil Soup

Gather the simple ingredients needed to make this simple soup. It'll be ready in no time at all!

Step One: Cut the celery stalk and carrots into pieces.

Step Two: Press the saute button. Add the oil and the sliced onion into the Instant Pot.

Step Three: Add the cut-up carrots into the Instant Pot.

Step Four: Add the chopped celery stalks.

Step Five: Add the salt and pepper into the Instant Pot.

Step Six: Add the red pepper flakes, dried basil, and a few bay leaves into the Instant Pot.

Step Seven: Add the diced tomatoes.

Step Eight: Pour the broth into the Instant Pot. Put on the lid and pressure cook on high pressure for 10 minutes.

Step Nine: Do a quick pressure release once the time is up.

Remove the cooked mixture and blend it.

Pour it back into the Instant Pot once blended and add the cream.

Step Ten: Press "Saute" for 3 minutes at normal temperature and stir.

Serve and enjoy!

Variations

Leave out the cream - If you don't want to add cream, you don't have to. It's a way to make it richer, but you can enjoy it without it.

Add spice - If you want to make spicy soup - go for it! Add chili flakes, chili powder, or anything that you want.

Recipe Notes

Ingredients

  • 3 celery stalks fresh
  • 2 tablespoon olive oil
  • 1 onion shredded
  • 2 carrot
  • 1 tablespoon black pepper
  • ¼ tablespoon red pepper flakes
  • 1 tablespoon dried basil dried
  • ¼ cup spring onions
  • 14 oz diced tomatoes
  • ¼ cup vegatable broth
  • ½ cup vegan cream

Instructions

  • All the oil to the Instant Pot and press the saute button.
  • Add the onions, carrots, and celery to the Instant Pot and saute for 5 minutes. Stir with a wooden spoon.
  • Add the pepper, basil, red pepper flakes, spring onions, and diced tomatoes to the Instant Pot and stir.
  • Pour in the vegetable broth.
  • Close the lid and cook on high pressure for 10 minutes.
  • When cooking time is complete, do a quick pressure release.
  • Add the mixture to a blender and blend. Then pour it back into the Instant Pot.
  • Add the vegan cream and stir well.
  • Press "saute" and saute for 3 minutes.
  • Serve and enjoy 🙂
