You want small, pea-sized pieces of butter throughout the dough. Slowly start to add your water to the mix until the dough comes together. Use only as much water as is needed to get the dough to form. Turn the dough out onto a floured surface and gently knead it a few times until it forms a cohesive ball. Be careful not to overwork the dough; you want to maintain those small butter chunks. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
