This Instant Pot Zucchini Alfredo is gluten-free and perfect for and perfect for a ketogenic diet.

Instead of the traditional pasta we are using homemade zucchini noodles so you can enjoy the feast with zero regrets 🙂

For this recipe we are using only the saute function. Means you can get an amazing low carb recipe in only 20 minutes total!

Can I use store-bought sauce?

Yes you can. To save time you can buy it from the market but we would recommend preparing your own.

We have prepared our own white sauce with butter, garlic, almond milk, and heavy cream.

Can I double up the recipe?

Yes, of course. Spiralize more zucchinis and make a double batch to serve a big crowd.

Please note - even if you double up the sauce, cooking time stays the same.

How to serve?

Instant Pot Keto Zucchini Alfredo serves great as a side dish but can be enjoyed as a whole light meal with addon vegetables like spinach or broccoli.

Can I store the leftovers?

Of course. To freeze this keto recipe just keep it in an airtight container for up to 2 months.

To reheat, let the Alfredo thaw for some time once the sauce separates from it (as it often happens) add a few splashes of heavy cream before reheating.

How to make

Gather the necessary ingredients.

Take zucchini and make thick zucchini spirals. You can use vegetable spiralizer, knife or any method you like. 

Take your instant pot, saute at normal for 5 minutes, and add butter

Add previously minced garlic, and almond milk.

Now add heavy cream, and mix.

Mix well for 4 minutes.

Take it out and clean the Instant Pot.

Saute the pot at normal for 6 minutes and water.

Let the water come to a boil then add zucchini. Cook for 30 seconds - 2 minutes. 

In my opinion 1 minute is ideal but it's up to you.

Dish out zucchini in a bowl and add the previously prepared cream mixture.

Add Parmesan cheese, black pepper, and mix.

Equipment

Ingredients

  • 2 garlic cloves minced
  • 2 zucchini
  • 1 tablespoon butter
  • ½ cup almond milk
  • cup heavy cream
  • 1 cup water
  • 1 teaspoon black pepper
  • 1 cup parmesan cheese

Instructions

  • Make thick zucchini noodles using zucchini spiralizer or anyway you like.
  • Press "saute" and add butter.
  • Once melts, add garlic and saute for 1 minute.
  • Add almond milk and heavy cream, stir well and saute for 4 minutes.
  • Press "cancel", take out the sauce and clean the Instant Pot.
  • Press "saute" and add water.
  • Let the water come to a boil and add zucchini in batches.
  • Cook the zucchini for 1 minute, take it out and place in a bowl.
  • Pour the cream sauce over the zucchini noodles.
  • Add parmesan cheese and black pepper, stir well and serve 🙂
