There’s something deeply comforting about stuffed cabbage rolls: they’re warm, flavorful, and packed with goodness.

But let’s be honest, traditional cabbage rolls can feel like a bit of a production.

That’s why I turned to my trusty Instant Pot for a quicker, low-fuss version that still delivers all the cozy vibes without the all-day kitchen commitment.

Why You’ll Love This Recipe

This recipe is quick and easy, thanks to the Instant Pot, making it perfect for busy weeknights. It’s completely vegetarian, yet still filling and flavorful, with tender cabbage leaves wrapped around a savory mix of sautéed vegetables. The ingredient list is simple and uses pantry staples, so you won't need to make a special grocery trip. Best of all, these rolls are loved by kids and adults alike—comfort food that works for the whole family.

Ingredients

Cabbage - Use a medium-sized green cabbage. Softening the leaves in the microwave makes them much easier to roll without tearing.

Vegetable Broth - Used to steam the cabbage in the microwave. It adds a subtle flavor while helping to soften the leaves.

Onions & Garlic - These aromatics form the flavor base of the filling. Chop the onions finely and mince the garlic for even cooking.

Carrots - Grated carrots add natural sweetness and texture. You can swap in zucchini or finely chopped mushrooms if you prefer.

Olive Oil - Used for sautéing. You can use any neutral oil, but olive oil adds a nice richness.

Tomato Sauce & Sour Cream - These create a creamy, tangy base for the filling. If you need a dairy-free option, try using plain coconut yogurt or a non-dairy sour cream.

Tips

Make sure to microwave the cabbage long enough that the leaves are flexible, but not too long that they tear. Sauté the vegetables thoroughly to build depth of flavor—that’s where a lot of the richness in this meatless dish comes from.

When rolling the cabbage, tuck the sides in like a burrito so they hold together nicely in the Instant Pot. And don’t skip the natural pressure release—those extra few minutes help the flavors come together and keep the rolls tender.

How To Serve

Serve these stuffed cabbage rolls with a dollop of extra sour cream on top or a drizzle of tomato sauce. They pair beautifully with crusty bread, mashed potatoes, or even a light cucumber salad on the side. Leftovers reheat well and are even tastier the next day!
