This isn't a real Roesti. I am a Swiss! The basic ratio is: 1/2 schreaded Potatoes, 1/4 Cheese & 1/4 Diced Onions. Depending on your Kanton, the cheese will vary. I use Emmenthaler & Gruyers most of the time. In some Kantons chopped ham or other meat is used. I fry mine with a little butter in a non stick or cast iron pan. Rather than schreading the patatoes raw, par boil them first. The end product will be whiter. Oft times for breakfast we would have left over Roesti in a bowl with Coffee over Plus a little Sugar & a hard cooked egg.
