Transfer potatoes to a small bowl lined with a kitchen towel to drain excess water from the potato. Failure to remove this water will lead to a soggy rosti.
Once the excess water has been removed, place the potatoes in a bowl, add salt, pepper and garlic powder and mix.
Spray cooking spray into a baking dish. Preheat the air fryer to 400F for 5 minutes.
Add potato to the baking dish, place it in the air fryer, and air fryer for 15 minutes at 350F.
Remove the completed potato rosti from the air fryer, serve with chives, and enjoy!

Grate the potatoes using the large holes of a box grater or a food processor. Squeeze out as much excess moisture as possible using a clean kitchen towel or paper towel. This will help the potato rosti crisp up nicely in the air fryer.
Flip your potato rosti halfway through the cooking time to get an even crisp on both sides.
