  1. Pecans are the best. I prefer them to pinenuts, which are usually rancid except during and shortly after the harvest [I lived 40 years in the heart of new world pinon harvest country]. And there is no pesky soaking, skinning etc. involved. The thought of skinning a walnut or almond rules that idea out for me. Talk about an easy way to double or more the prep time! And, pecans have a texture very similar to pinon. No toasting required or desired.
