Ingredients

Chimichurri Sauce:

This authentic chimichurri sauce is made of parsley, garlic, oregano, red wine vinegar, peppercorns, and olive oil. However, there are additional ingredients you can use to cater your homemade chimichurri sauce to your personal tastes.

Cilantro, thyme, or basil can add a fresh, herbaceous element, while paprika, crushed red pepper flakes, or chilies will bring the heat to this dish. You can add some extra acidity to your chimichurri sauce with some lemon or lime juice or some sweetness and texture with shallots or red onion.

Steak:

Cuts like skirt, flank, and ribeye steaks make the best chimichurri steak because they are known for their rich flavor and tenderness when cooked properly. To prepare your steak for cooking, ensure you pat it dry with a clean paper towel. This allows the seak to sear better, giving it a nice crust. If you want to try this recipe with a different protein, grilled chicken, lamb, pork, shrimp, fish, tofu, and portobello mushrooms, all taste great, topped with this homemade chimichurri sauce.

Steak Seasoning:

A good steak really doesn't need much more than to be generously seasoned with salt and pepper. However, if you want to experiment with the flavors in your steak, you can get creative with any of your favorite herbs and spices, from rosemary, thyme, and sage to garlic powder, paprika, and cayenne.

How to Make Chimichurri Steak

Step One:

Add the parsley, garlic, oregano, red wine vinegar, peppercorns, and olive oil in a food processor or blender and blend into a paste. Set aside.

Step Two:

Season your steak with salt and pepper, and heat some olive oil in a pan on medium-high heat.

Step Three:

Add your steak to the hot pan and cook for 3-5 minutes on each side to achieve a nice sear.

Step Four:

Once the steak is cooked to your preference, remove it from the heat, tent it with aluminum foil, and let it rest for 5-10 minutes. This allows the juices to redistribute, giving you a juicier and more flavorful steak.

Step Five:

Slice your rested steak against the grain to ensure a more tender bite.

Step Six:

Serve your chimichurri steak topped with your homemade chimichurri sauce, and enjoy!

Tips

  • Chill your homemade chimichurri sauce for 20-30 minutes before serving for a more refreshing chimichurri steak. This allows the flavors to meld together, resulting in a tastier bite.
  • Make a larger batch of chimichurri sauce and keep it on hand to elevate any meal. Add it to your eggs in the morning, chicken wrap for lunch, or grilled meats and veggies for dinner. It's the perfect way to kick any meal to the next level.

What to Serve With Chimichurri Steak

Chimichurri steak pairs beautifully with a variety of sides that complement its bold flavors. Roasted or grilled vegetables, such as asparagus, peppers, or zucchini, add a smoky contrast, while garlic mashed potatoes or a simple rice pilaf provide a comforting base.

For a lighter option, serve the chimichurri steak with a fresh salad of mixed greens, cherry tomatoes, and a lemon vinaigrette.

Grilled corn on the cob and crusty garlic bread also work, allowing you to soak up any extra chimichurri sauce.

I live in Arizona, and before this, in New Mexico. Chimichurri sauce is made with cilantro NOT parsley
If you don't like cilantro, then use parsley
