Ingredients

Chicken - This forms the base of the recipe, where boneless chicken pieces are used. It's preferred to use thigh pieces as they're juicier and tender. If you're health conscious, chicken breast can also be used as a leaner option.

Yogurt- Yogurt is used in the marinade to tenderize the chicken and add a tangy flavor. Greek yogurt can be used as a thick and creamy substitute.

Garam Masala- This is a blend of ground spices common in Indian cuisine. If unavailable, you can use a blend of cumin, coriander, cardamom, and cinnamon as a substitute.

Tomatoes- These are used in the sauce to give it body and a sweet-tart flavor. In absence of fresh tomatoes, canned tomatoes or even tomato sauce can be used.

Heavy Cream- Added at the end to make the curry rich and creamy. For a dairy-free alternative, you can use coconut milk.

Tips

  • Marinate the chicken for at least 2 hours or preferably overnight to ensure the flavors fully penetrate.
  • Control the level of spiciness by adjusting the amount of chili powder used.
  • Cook the spices properly to release their full flavor, but don’t overcook or they may become bitter.
  • Add the cream at the very end of the cooking process and simmer on low heat to prevent it from curdling.
  • For a vegetarian alternative, replace chicken with tofu or paneer (Indian cottage cheese).

How to serve

Chicken Tikka Masala is a versatile dish that can be paired with various side dishes. It’s traditionally served with Indian bread like naan or over basmati rice to soak up the rich and flavorful sauce. The spiciness of the curry can be balanced with a side of cooling cucumber raita or a dollop of plain yogurt.

  • Chicken Tikka Masala Wrap': Wrap it in a tortilla or roti along with some fresh lettuce and cucumber for a quick lunch.
  • Chicken Tikka Masala Pasta': Mix it with cooked pasta for an interesting fusion dish.
  • Chicken Tikka Masala Pizza': Use the curry as a topping on pizza with a sprinkle of mozzarella for a unique flavor profile.
