boneless chicken

yogurt

garam masala

Instructions
Marinate the chicken pieces in yogurt and garam masala. Leave it for at least 2 hours or overnight in the fridge.
Cook the chicken pieces in a hot pan until they're browned. Remove them and set aside.
In the same pan, add the chopped tomatoes and cook until they're softened and start to break down.
Add the cooked chicken pieces back into the pan and mix with the tomatoes. Cook for a few more minutes until the flavors combine.
Stir in the heavy cream and let it simmer on low heat for 10 minutes until the sauce thickens.
Notes
Marinate the chicken for at least 2 hours or preferably overnight to ensure the flavors fully penetrate.
Control the level of spiciness by adjusting the amount of chili powder used.
Cook the spices properly to release their full flavor, but don’t overcook or they may become bitter.
Add the cream at the very end of the cooking process and simmer on low heat to prevent it from curdling.
For a vegetarian alternative, replace chicken with tofu or paneer (Indian cottage cheese).
