Ingredients

  • 1 pound kielbasa sausage
  • 1 pound pasta
  • 1 onion chopped

  • cups heavy cream
  • ½ cup reserved pasta water or as needed
  • salt for the pasta water
  • salt and pepper to taste

Instructions

  • Slice the kielbasa into bite-size pieces.
  • Bring a large pot of well-salted water to a boil. Cook the pasta until al dente. Before draining, reserve ½ cup of the pasta water.
  • While the pasta cooks, heat a large skillet over medium heat. Add the kielbasa and cook for 4–5 minutes, stirring occasionally, until browned. Transfer it to a plate, leaving the rendered fat in the skillet.
  • Add the chopped onion to the same skillet. Cook for 5–7 minutes, stirring occasionally, until soft and lightly golden.
  • Add the minced garlic and cook for about 30 seconds, just until fragrant.
