Ingredients

Chicken- You will need boneless, skinless chicken breasts or thighs. These are lean, quick to cook, and easy to slice. If you are vegetarian or just want a change, try tofu or seitan instead.

Mushrooms- White button or cremini mushrooms work best for their firm texture and mild flavor. If you're looking for a gourmet twist, try using shiitake or portobello.

Sour Cream- This gives the Stroganoff its signature tangy richness. You could substitute with plain Greek yogurt for a healthier twist.

Onions-You'll need a basic yellow or white onion. They caramelize beautifully and add a sweet depth of flavor. If you want a milder taste, try using shallots.

Paprika- This is a key ingredient that adds a mild sweet-smoky flavor. You can use smoked paprika for a more pronounced smokiness, or cayenne pepper for heat.

Tips

  • Use a mix of different types of mushrooms for a more complex flavor profile.
  • Sauté your mushrooms well until they are golden and have released all their liquid. This concentrates their flavor.
  • Always rest your chicken for a few minutes after cooking to keep it juicy and tender.
  • For a richer flavor, substitute some of the sour cream with cream cheese.
  • Try adding a splash of white wine to the onions while sautéing for extra depth.

How to Serve

Chicken and mushroom stroganoff is traditionally served over noodles or rice, but don't let tradition limit your creativity. Its rich and creamy sauce pairs well with any kind of grain, making it a versatile dish that's easy to customize to your liking.

  • Noodles: Go classic by serving the stroganoff over a bed of wide egg noodles. The noodles soak up the creamy sauce wonderfully. For a healthier alternative, try whole wheat noodles.
  • Rice: Serve it over steamed white or brown rice for a hearty and satisfying meal. For a flavor-packed substitute, try garlic butter rice.
  • Baked Potato: Try something different by serving your stroganoff over a hot baked potato. The creamy sauce and hearty potato create a wonderful, comforting combination.
