Instructions
Slice the chicken into thin strips and season with salt, pepper, and paprika.
Heat oil in a pan, add the chicken and cook until golden and cooked through. Remove and set aside.
In the same pan, add the sliced onions and cook until they are soft and golden.
Add the mushrooms to the pan and cook until they have released all their liquid and started to caramelize.
Return the chicken to the pan, add the sour cream, and stir well to combine.
Simmer for a few minutes until the sauce is hot, then serve.

Use a mix of different types of mushrooms for a more complex flavor profile.
Sauté your mushrooms well until they are golden and have released all their liquid. This concentrates their flavor.
Always rest your chicken for a few minutes after cooking to keep it juicy and tender.
