Easy to make, easy to adapt, and easy to enjoy—that's why this beef and potato casserole is a winner.

Ingredients

Ground Beef - This is the meaty part of the casserole. You could also use ground turkey or chicken as a substitute.

Potatoes - You'll slice these and layer them in the casserole. You could use sweet potatoes for a different flavor.

Cheese - Cheddar works great, but you can use mozzarella or a Mexican blend too.

Onion -You can skip it or use onion powder if you don't like chunks of onion.

Cream of Mushroom Soup - for creaminess. You could use cream of chicken if you prefer.

Tips

  • Brown the ground beef well for better flavor.
  • Precook the sliced potatoes for a few minutes in the microwave to speed up cooking time.
  • If you use low-fat cheese or meat, the casserole might be less creamy.
  • For a crispy top, broil the casserole for a couple of minutes after it's baked.
  • You can make this ahead and freeze it. Just bake it a little longer if you're cooking from frozen.
