Ingredients

Basmati Rice - This is a long-grain variety, perfect for pilau due to its fluffy and non-sticky texture when cooked. If you can't find basmati, jasmine rice is a good substitute.

Vegetable Oil - This helps to sauté the spices and onions, releasing their flavors into the oil which then infuses into the rice. You can use ghee (clarified butter) for a richer flavor.

Onion - It adds a subtle sweetness and depth of flavor to the pilau. Yellow or white onions are preferable, but red onions can also be used.

Mixed Spices - Typically, this includes cumin, coriander, turmeric, and cardamom. They give the pilau its characteristic warm, earthy flavor. You can adjust the types and quantities based on personal preference.

Chicken or Vegetable Broth - This not only cooks the rice but also enhances its flavor. You can substitute it with water, but using broth will give a more flavorful result.

Tips

  • Rinse the basmati rice before cooking. This removes the excess starch and helps the rice to be fluffy and separate after cooking.
  • Use a heavy-bottomed pot. This prevents the rice from burning or sticking to the bottom.
  • Don't skip the step of sautéing the onions and spices. This process, known as blooming, draws out the flavors and ensures they're evenly distributed through the rice.
  • The liquid to rice ratio is important. Too much liquid will make the rice mushy, while too little may leave it undercooked.
  • After the rice is cooked, let it rest for a few minutes before fluffing. This allows the moisture to distribute evenly, resulting in perfectly cooked, fluffy rice.

How to Serve

Pilau rice is wonderfully versatile and can be served in numerous ways. It's a great side dish that complements many different main dishes, particularly those with strong flavors as the pilau's spices can hold their own.

  • With a Curry: Pilau rice pairs beautifully with a variety of curries. The spiced, aromatic rice complements the rich, hearty flavors of the curry.
  • With Grilled or Roasted Meats: The hearty, savory taste of the rice provides a nice contrast to grilled or roasted meats. Think of grilled chicken skewers or roasted lamb.
  • As a One-Pot Meal: Add in some cooked chicken, shrimp, or mixed vegetables into the pilau, and you have a one-pot meal ready to serve.
