Ingredients

  • 10 pounds live crawfish
  • 4 pounds small red potatoes
  • 2 pounds smoked sausage cut into 1-inch pieces
  • 10 earsof corn halved
  • 2 cups of Cajun seasoning
  • Salt to taste

Instructions

  • Rinse the crawfish thoroughly in fresh water until the water runs clear.
  • Fill a large pot with water, add the Cajun seasoning and salt, and bring to a boil.
  • Add the potatoes to the pot and cook for about 10 minutes until they start to soften.
  • Next, add the smoked sausage and continue boiling for another 5 minutes.
  • Add the corn and boil for an additional 5 minutes.
