Instructions
Rinse the crawfish thoroughly in fresh water until the water runs clear.
Fill a large pot with water, add the Cajun seasoning and salt, and bring to a boil.
Add the potatoes to the pot and cook for about 10 minutes until they start to soften.
Next, add the smoked sausage and continue boiling for another 5 minutes.
Add the corn and boil for an additional 5 minutes.
Finally, add the crawfish and cook for about 5 minutes, or until they turn bright red.
Drain the water from the pot, and spread the contents out on a table for serving.
Notes
Ensure you thoroughly rinse and purge the crawfish before cooking to remove any dirt or grit.
Don't overcook the crawfish; they should be cooked just until their shells start to turn bright red.
Cut the potatoes and corn into smaller pieces to help them cook evenly and absorb more flavor.
Adjust the amount of Cajun seasoning to control the spice level to your preference.
Add ingredients in stages, starting with the ones that take longest to cook.
