Ingredients

  • 4 ounces 115g dark chocolate, finely chopped
  • 2 tablespoons 30ml water
  • 2 eggs separated
  • ¼ cup 50g sugar, divided
  • 1 cup 240ml heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Melt the chocolate with water in a heatproof bowl over a pot of simmering water (double boiler method). Remove from heat and let cool slightly.
  • Stir egg yolks into the melted chocolate until smooth.
  • In a separate bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add half of the sugar and continue whipping until stiff peaks form.
  • In another bowl, whip the heavy cream with the remaining sugar and vanilla extract until stiff peaks form.
