Ingredients

  • 4 chicken thighs bone-in, skin-on
  • 2 cups oegg noodles
  • 2 medium carrots peeled and chopped
  • 2 celery stalks chopped
  • 1 large onion diced

Instructions

  • In a large pot, combine chicken thighs with 6 cups of water. Bring to a boil, then reduce heat to low and simmer until chicken is cooked through, about 30 minutes.
  • Remove chicken from the pot and let it cool. Once it's cool enough to handle, remove the skin and bones, and shred the meat.
  • In the same pot, add the carrots, celery, and onion. Simmer until vegetables are tender.
  • While the vegetables are cooking, cook the egg noodles separately according to the package instructions.
  • Once the vegetables are tender, return the shredded chicken to the pot and add the cooked noodles. Stir to combine and heat through. Season with salt and pepper to taste.
