Ingredients

  • cups Arborio rice
  • 2 chicken breasts diced
  • 2 cups white mushrooms sliced
  • 1 cup white wine
  • ½ cup freshly grated Parmesan cheese
  • 4 cups chicken broth
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • In a large pan, heat the olive oil over medium heat. Add the chicken and cook until it's no longer pink. Remove from the pan and set aside.
  • In the same pan, add the onion and garlic and cook until they're soft.
